My 4 Ingredient Fix: Homemade Peanut Butter Cups With Banana

image

Stumbled upon a great (and seemingly easy) recipe for peanut butter cups with banana.  While I’m often skeptical of recipes posted on IG & blogs, I thought I’d give this one a try.  My husband is a Reese’s junky and we had tons of bananas courtesy of my father who thinks my 8 month old consumes produce at an alarmingly unrealistic rate.

All you need to make these is coconut oil, peanut butter (could easily be substituted with almond or soynut butter), chocolate chips, and bananas!  I made a batch of white chocolate and milk chocolate cups.  My husband made sure to sneak and devour the majority of them while I was at Muay Thai.  According to him you haven’t lived until you’ve wrapped them in bacon.

Ingredients:

16 mini cupcake liners
16 banana slices
3/4 cup chocolate chips
1/2 teaspoon coconut oil
1/4 cup peanut butter
2 teaspoons coconut oil, melted

Place the liners into a mini cupcake pan (preferably one that you can easily slide into your freezer).  If you do not have a mini cupcake pan, double up the liners for stability and place in any flat bottom baking dish.

Melt chips in a double boiler or if you so chose you can melt them in the microwave.  If you go the microwave route be sure to remove them every 30 seconds to stir.  White chocolate seizes up easily so be careful not to overheat the mixture if you choose to go this route.  Once the chips are melted, add a 1/2 tsp. of coconut oil to the mixture.

To make the peanut mixture, add 2 tsp. of melted coconut oil to the peanut butter and blend.  (Coconut oil melts easily in the microwave in 15 seconds)

Spoon approximately 1 tsp. of the chocolate mixture into the bottom of each liner, followed by a slice of banana, a tsp. of the peanut mixture, and then top with the chocolate mixture.

Cool cups in the freezer for about an hour or until firm, then ENJOY! Be careful not to leave out of freezer (especially since it’s summer), the mixture melts easily and will leave for messy snacking.

Having been a Smiley 360 member for several years I have the privilege to try out a plethora of products.  This mission is for the Sleep Number DualTemp Layer.  I must tell you they did give us a free pillow for our time to test out the product, however I’ve been dying to go into this store for years so they didn’t have to do much to get me there.

This topper will costs you a little under $2000 for a queen size, however for individuals like my husband who are little hot boxes when they sleep it is definitely worth every penny.  It offers cooling or heating function based upon you preference and is segmented so each sleeper can choose.  It was neat to try out all the technology that goes into their products.  I’m pinching pennies presently in hopes of one day getting Ariana the #sleepiqkids mattress that will be in stores soon.  It monitors you children’s sleeping habits, and can even scan for monsters under the bed (where was this when I was a terrified little kid who regularly sleep walked around the house).

Why I Coupon

To some couponing, deal hunting, and advanced planning shopping is silly.  That being said I can’t imagine living any other way. Growing up my Father instilled in me the importance of a good deal, and why you should never wait until you run out of something to go buy it.  We would sit on the couch and scour the ads for sales.  Once we were at the store he would fill up the cart with enough for my sister, himself, and I to each max out on whatever the store limit was.  Cash in hand I’d stroll up to the register to buy my items, and it never failed the cashier would always have some comment.  Looking back I’d love to tell that cashier that for every penny we saved on sugar, toilet paper, toothpaste, etc., my parents were able to pay for my undergraduate degree and a brand new car for me when I went away to college.

As a new mom riddled with debt from law school and my husbands student loans, bargain shopping is even more important than ever.  With the average in-state college expenses for a bachelors degree projected to cost my daughter around $200,000, we’ve already opened her a MESP (Michigan Education Savings Plan) account to help offset her expenses.  Trying to save for her college while still paying off our own wouldn’t be possible if we weren’t frugal.  Does this mean I have a stockpile in my basement that my husbands friends consider “hoarding”…YES, am I ashamed of it… NO.  For every large haul of free toothpaste, or nearly free children’s clothes and toys means that we saved money for ourselves and our family.
